Cannon Beach Summer Treat Recipe: Fruit Salsa & Cinnamon Chips

Chips and salsa of any kind makes for a wonderful afternoon snack or lively addition to a potluck party. However, fruit salsa and cinnamon chips substitute the conventional fresh and spicy flavor notes for a lovely combination of sweet and tart notes.

Fruit Salsa with Cinnamon Chips Ingredients
Fruit Salsa
- 1 cup of strawberries, finely chopped
- 1 medium navel orange, peeled and finely chopped
- 3 medium kiwi fruits, peeled and finely chopped
- 1 (8-ounce) can of unsweetened crushed pineapple, drained
- 1 tablespoon of lemon juice
- 1 1/2 teaspoons of sugar
Cinnamon Chips
- 10 (8-inch) flour tortillas
- 1/4 cup of butter, melted
- 1/3 cup of sugar
- 1 teaspoon of ground cinnamon
Combine all the salsa ingredients in a small bowl, then cover and refrigerate for at least 30 minutes before serving.
For the cinnamon chips, brush each tortilla with melted butter before cutting into eight wedges. Combine the sugar and cinnamon, and then sprinkle the mix over the tortilla wedges. Place the tortilla wedges on ungreased baking sheets. Bake at 350 degrees for 5-10 minutes or until crisp.
Let cinnamon chips cool for a minute, and then serve with the fruit salsa.
This recipe makes approximately 2-2 ½ cups of fruit salsa and 80 cinnamon chips. It’s the perfect dish for a potluck dinner with friends or as a fun appetizer at a family reunion in Cannon Beach.
