Imperial Chicken Salad

The new year is here, and after the rich dishes of the holidays, we’re bringing you this delicious, crisp recipe that’s sure to be a fan favorite. With crunchy lettuce, won-ton strips, and bright ginger, our Imperial Chicken Salad is always a crowd-pleaser. Try this recipe out on your family and friends or while on your Cannon Beach vacation!

Marinade for Chicken

This recipe is for 8 boned and skinned chicken breast halves.
½ cup dry sherry
1 clove garlic, mashed
½ cup soy sauce
2-inch piece of ginger root, sliced and mashed

Dressing

½ cup salad oil
2 tablespoons lemon juice
2 teaspoons soy sauce
1 teaspoon sesame oil
2 teaspoons dry mustard
3 tablespoons sugar
2 tablespoons white wine vinegar
1 teaspoon grated fresh ginger
1 clove garlic, mashed

Salad

1 small romaine lettuce, shredded
1 medium head iceberg lettuce, shredded
6 green onions, chopped
Roasted and slivered chicken
¼ cup toasted sesame seeds
½ cup toasted almonds, chopped or sliced
Won-Tons
3 ounces won-ton wrappers
½ cup oil

Instructions

To prepare marinade, combine sherry, garlic, soy sauce, and ginger. Pour over chicken. Marinate in the refrigerator for several hours or overnight.

Place chicken in a shallow baking pan, removing any ginger root clinging to it. Roast at 350 degrees for 20 to 25 minutes. Cool. Sliver or cube chicken and refrigerate.

Prepare dressing. Combine dressing ingredients and refrigerate. Before using, strain out ginger and garlic.

To prepare salad, place greens and onions in a large bowl. Toss with dressing. Sprinkle with sesame seeds.

Place greens on individual plates and top with chicken. Sprinkle almonds on chicken and arrange won-ton strips around the edges. (Crisp cho mein noodles may be substituted for won-tons.)

To prepare won-tons, cut them in ¾-inch strips. Fry strips in hot oil, one layer at a time, until crisp. Drain on paper towels.

*Note, I use romaine for Jazz because it holds better. Because we batch our salads for serving, everything is mixed together with won-tons sprinkled on top.
