Cannon Beach Spring Recipe: Marinated Shrimp
Spring at Cannon Beach is a wonderful experience for the family, especially when you stay in a vacation home. There's nothing quite like stepping outside on a bright spring morning to take in Cannon Beach's fresh air, or share a homemade meal with friends and family out on the deck with golden sunset views.
One of our favorite dishes to serve during the spring is the Marinated Shrimp recipe below. Like our Herbed Cheese-and-Cracker Bits recipe, this was pulled from our Olson Family Recipes book. Marinated Shrimp Recipe (Adapted from Best of Friends)
- 1-2 pounds of large cooked and shelled shrimp
- 1 oninon, thinly sliced (Bermuda or purple are great)
- ½ cup salad oil
- 1 ½ cups vinegar (tarragon is nice)
- 2 ½ teaspoons capers (those little round green things that look like tiny green peas - in a bottle)
- 2 ½ teaspoons celery seed
- 8 whole cloves
- 1 clove garlic, minced (or powdered garlic to taste or neither)
- 1 ½ teaspoons salt
- 2 bay leaves
- 4 peppercorns
- ¼ teaspoon chili flakes
BONUS: These pickled shrimp will keep for at least a week in the fridge so long as their kept well covered.
These marinated shrimp are a wonderful little dish for a family gathering, and they're perfect as a holiday feast appetizer or addition to the buffet table. If you do use this for an appetizer, have toothpicks handy and get your bites in quick. This crowd-pleasing dish won't stick around long out in the open!
