Fall Favorite: Pecan Pie Bars
The season of pumpkin spice is upon us! Everywhere you turn in the grocery store aisles, there seems to be a new product boasting the flavor. From Cheerios and Oreos to ice cream and even protein powder, it’s inescapable.
And while we fully support the delicious fall flavor, this month, we’re turning our eyes toward another seasonal treat with our gooey and delicious Pecan Pie Bars. Whether you try this recipe while on vacation or in the comforts of your own home, we hope you love it as much as we do.
Pecan Pie Bar Ingredients
Pecan pie takes a turn as a bar cookie – and a rich one at that.- 2 cups all-purpose flour
- ½ cup sugar
- 1/8 teaspoon salt
- ¾ cup butter or margarine, cut up
- 1 cup firmly packed brown sugar
- 1 cup light corn syrup
- ½ cup butter or margarine
- 4 large eggs
- 2 ½ cups finely chopped pecans
- 1 teaspoon vanilla extract
Combine brown sugar, corn syrup, and ½ cup butter in a saucepan; bring to a boil over medium heat, stirring gently. Remove from heat. Stir one-fourth of hot mixture into beaten eggs; add to remaining hot mixture. Stir in pecans and vanilla. Pour filling over crust. Bake at 350 degrees for 34 to 35 minutes or until set. Cool completely in pan on a wire rack. Cut into bars.
Makes 16 large or 32 small bars.

*Note: these are very rich, so you can cut them into smaller squares or again diagonally.
